chocolate marshmallow cookies


My mom always made these cookies and I never thought they were the greatest until recently.  Now I crave them constantly!  They are great because they are super easy and so so good.  They are a great cookie if you have to take treats somewhere because they are pretty simple to make but look really good.


Chocolate Marshmallow Cookies

2 boxes chocolate cake mix (swiss chocolate, german chocolate, devil's food, etc.)
4 large eggs
1 cup crisco
1 bag large marshmallows

Mix (beat) cake mix, eggs and shortening thoroughly.  Make small balls the size of a quarter (I did a bit smaller, I like the cookies bite size).  Do not flatten.  Bake on an ungreased cookie sheet at 350 degrees for 11-12 minutes (I did mine for 9) or until cookies start to crack all over the top.  While cookies are baking, cut the large marshmallows in half with a pair of scissors.  Remove cookie sheet from oven and place half of a large marshmallow on the top of each cookie and return to the oven for one more minute.  Remove cookies from oven and let cool on cookie sheet.  Make frosting and put a large spoonful on top of each cookie.  Frosting should be thin enough to spread out a little on the top of each cookie.  

Chocolate Frosting (I double this)

4 ounces cream cheese
1/3 cup butter
3 cups powdered sugar
3 tablespoons cocoa
1 teaspoon vanilla
milk - enough to make a good spreading consistency

Soften cream cheese and butter.  Add other ingredients and beat until smooth.  

This recipe makes about 5 dozen medium/large cookies.

(I half this recipe and make the cookies bite size and it still makes about 5 dozen.  In the picture above, I had run out of large marshmallows so I just dumped mini marshmallows into the icing.  This tasted just as good and saved a bit of time.  I also always use parchment paper on my cookie sheets because you can just lift all the cookies right off and then use the same cookie sheet over and over.)
