whole wheat flax seed pancakes

These are straight up the best pancakes I have ever had. I just switched and added an ingredient to a pancake recipe I found in my Better Homes and Gardens Cookbook. Yum yum to my tum.


Whole Wheat Flax Seed Pancakes

1 cup whole wheat flour
1 tablespoon sugar
1 tablespoon whole flax seeds
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt

1 tablespoon lemon juice
1 cup milk
1 egg
2 tablespoons oil

Combine the lemon juice and milk in bowl and let sit. Combine the dry ingredients in another bowl and stir together. Add the egg and oil to the milk mixture and stir together. Finally add the wet ingredients to the dry and stir all together making the pancake batter. Cook the pancakes on a warm riddle and enjoy!!

This recipe makes about six average size pancakes. It is just barely enough for Clay, Monet and myself. I top my pancakes with butter, warm syrup and raspberry jelly. YUM!

So we made these on Saturday and LOVED THEM. Wow, we will make these regularly now for sure!
